Split Pea Soup

It is 60 degrees in Seattle, but we all know that is not the case in other areas around the US. This split pea soup is an easy recipe that wont break the bank.

This time I decided to add avocado and roasted pine nuts for toppings. 

I also cooked it in the crock pot for 2 hours on high and 2 hours on low.

Baked Parmesan Chicken

For kids or for the adults who are children at heart, try cutting your pieces of chicken in to strips and make baked chicken fingers instead. (You may need a larger baking pan to do it this way)

Dip them in some hot sauce for an extra kick!

Add a large green salad with cucumbers, cherry tomatoes, and avocado to go with your baked chicken.

Slow cooked Veggie Chili

Throw all the ingredients in the crock pot and come back to a flavorful chili

Suggested Health Changes:
  • Top your chili with avocado and cilantro
  • Add Breath of the Dragon Hot Sauce or your favorite hot sauce to add a little spice to your chili

Slow Cooker Lentils and Sweet Potatoes

Delicious meal made very easy. Throw everything in the cooker and come back in 3.5 hours.

Suggested Healthy Changes:
  • Cook brown or black rice separately and serve with the lentils
  • Top your lentils with some cilantro for a little flavor

Suggested Healthy Changes:
  • Use brown rice instead of white rice
  • Use less sugar in tofu and sushi rice recipes
  • Add extra veggies to the meal
  • Serve less rice per serving
